Black-Eyed Pea Salad

Ingredients

1 medium cucumber
1 can black-eyed peas
1 can diced tomatoes
2 Tbsp balsamic vinegar or Italian dressing

Directions

  1. Wash your hands.
  2. Slice or cube cucumber and place in a medium-sized bowl.
  3. Drain black eyed peas and diced tomatoes, and add to the bowl.
  4. Add balsamic vinegar or Italian dressing.
  5. Stir ingredients.
  6. Chill before serving.
